I will be smoking babybacks using rib hooks. When I hang the ribs on the hook should the thick part
of the rib be on top or on the bottom of the smoker??

I usually do StL ribs and hang my rib with the meaty side down closer the wood box.
I've hung mine on bacon hangers, as I have no rib hooks. I always hook on the second rib, as sometimes the first rib will pull out when it gets close to doneness. this really happens with baby backs.
It may just be me, but ribs seem to loose more moisture when they are hung vs racked.

Keep the thickest end of the rack closest to the heat source.
