Did a 2 bone, 4.5lb PR yesterday. Albertsons had them on sale for $5.99 a pound. Got the butcher to get me a well marbled one. He removed the bones and tied them back on. Put it in at noon yesterday at 200 degrees with 3 garlic cloves and 2.5 ounces of hickory. Once it reached 115 degrees- I jacked the temp up to 250 once it was done at 132 degrees. Let it rest for about an hour. Removed the bones and thinly sliced with fresh horsy sauce on a roll- it was excellent. It was a little smokey so I might back down on the amount of wood next time or not up the temp to 250- just let it ride on 200 the whole time.
