I bought this used from a friend, it is about 3 years old. It worked good the Ist couple times but then the trouble started. I was doing a brisket, smoked it for 2+ hours then wrapped it. The temp had dropped some while I wrapped it & then it started coming back up. I had it set for 210 & it kept right on going up past 225. I tried resetting it a few times & finally got it working right, but it continued to be a problem. The last time I tried I set it for 210 & it just kept right on going up, nothing I could do would stop it. So I gave up & finished it in the house oven. I know I will have to call cookshack but does any one have any ideas what is going on? Probably need some expensive parts? Thanks! Dave

That would be about the same age as my AmeriQue. Luckily the only problems I’ve ever had with mine were self induced and I’m a bit red faced when Cookshack tells me what I did wrong. Red Face

Off hand the only thing I can think to check is to make sure nothing is touching the smoker’s temp probe.
With the racks in the lower position (I think) it is easy to get your product up against the temp probe and that will reek havoc with your temps
A little overshoot isn't a problem so from the description I can't tell if you have an issue or not. You said it was going on up, but you never stated how high.

Turn it on, set it for 250 and chart the temp once an hour. See where it stabilizes.

It's the average temp you need to consider. If you set it at a set temp, it will be above and below that temp throughout the cycle.
