Welcome to the forum. It this when you first start the unit? These units have a lock on feature for the first 20 minutes it doesn't matter what temp you have set. The programing turns them to 300 degrees. After the first 20 minutes they will go to the temp you have set. This is to get the smoke going. The problem I had was I did some smoked Salmon on a hot day here, and the lock on feature took the smoker temp over 300 degrees. The heating elements turned off, and didn't come back on until the temp dropped below 300 degrees. One way around this is to start the unit, and let it run for 20 minutes. Open the door and load your product and wood. Don't turn the unit off, or it will go back into the Lock on mode.
