Smokin, good question. At this point, we have been having extensive menu planning and start up discussions. Other then some in home testing this summer, no actual cooking in commercial kitchen, other then the experience our chef brings.(self taught, has been in restaurants for 25 ++ years.)

Kitchen should fire up soon, where we'll start working on sauces, sides, center of plate, flatbreads. We pretty much of the burgers down.

Also working on our FOH / BOH training program. Plan to stress the importance of Hospitality, which we have studied via Danny Myers in NY. His book "Setting the Table" is outstanding.

I'll keep you posted once we fire up the line.
I'd like to come, as it's been fun following this adventure with you.

But don't know if Mrs. Smokin would think a trip to Ohio in the winter is "vacation". I have an offer to work the Houston LS Rodeo this year but she doesn't see that as vacation either.
Russ, you MUST try El Tiempo for Tex-Mex. There's a couple of locations...one's close to the cook-off area. The Margs are righteous...ask for the Meltdown. They do an "El Carbon" platter for 2 or 4...you pick the goodies. It comes out on a Hibachi. The 2 will feed 4. My pref is lobster, bacon wrapped shrimp, loinbacks, Carnitas and chicken. YUM!

I agree this place is great, one is next to a strip joint, but does not diminish the food any. Just kidding, do stop by this place. I have been for years, food is worth it.
