I have am Amerique which was rewired. When I set the time and temperature, the set time starts to count down while the unit is getting up to my set cooking temp. For some reason I thought that the timer doesn't count down until the set temperature is first reached. Am I right?

I'm pretty sure the time starts counting down when the smoker is started. I would guess because the meat goes into this as a cold smoker when it's set and turned on.
Whether cooking to temp or time you need to press start. So you turn the smoker on, set your time, temp, etc. Then press start. Since it was rewired, it may have been incorrectly done. Nothing should happen until you press start.
oldsarge is correct. On my AQ, the timer starts when you press start, so it is running while the smoker heats up. That only takes about 15 - 20 minutes for a 225 or 250F cook. If you like, you can always reset the timer once it gets up to temp.
