Courtesy of our own drbbq.Ray has shared this recipe from one of his newer cookbooks in a discussion of best chicken dishes.

From cooking with Ray,I know he still likes to present legs in comps or caters, while almost all others offer thighs.

Courtesy of The NFL Gameday Cookbook by me. This stuff is a little gooey and sticky but it's excellent.

Dr. BBQ's Raspberry Chipotle Barbecue Sauce
The heat of this sauce can be adjusted buy adding or subtracting a chipotle. Three works for me.

3 Chipotles in Adobo
1 Tablespoon of the Adobo sauce
1 cup seedless raspberry Jam
½ cup catsup
1 T lemon juice
Pinch of salt

Add the Chipotles to a blender. Top with the sauce, jam, catsup, lemon juice and salt. Puree for 1 minute. Pour into a bowl to serve.

I've never tried ot on anything but chicken legs and I do dip them or brush it on towards the end of cooking. Add a little apple juice if you need to thin it.

Makes about 2 cups
