Here's a very simple "Sweet and Sour Thai Cucumber Salad" recipe from a Thai Cookbook by Jennifer Brennan. I've made this many times. Adjust the heat by using more or less red pepper flakes.


2 large cucumbers, halved lengthwise, seeds removed and sliced thinly

1 small red onion, peeled, and sliced thinly

1/2 tsp dried red pepper flakes

4 TBL granulated sugar

1/2 cup water

5 TBL white vinegar

1/2 tsp salt

Place cucumber, onion and red pepper flakes in a small mixing bowl. In a small saucepan, over low heat, dissolve the sugar in the water. Remove from heat and stir in vinegar and salt. Pour this mixture over the vegetables in the bowl. Stir and refrigerate until served.
I think we should be able to get side dishes that go with bbq on here. But I know most men are strictly MEAT eaters.
If you want an Italian vinaigrette you can use Paul Newman's olive oil and vinaigrette or one of the other major salad dressing compnay's type. Wishbone or someone similar has one made with olive oil.The recipes other s have given you sound like one Mom used.She also made one that had sour cream or heavy cream added to the vinegar,salt and sugar.It was more Pa dutch than Italian.

My thoughts isn't about BBQ sides, it's keeping this from becoming a recipe forum, as there are enough of those around.

We frequently talk about sides and what goes well with BBQ and recipes for sides get posted in the recipe forum.

Here is a Fruit & Veggie Salad that uses cucumber as a main ingredient. Some people like onion in it but my family likes it without onion. Seems like an odd mix of ingredients but this stuff disappers fast around my house.

Fruit & Veggie Salad

Mix the sauce to taste. I eyeball according to how much veggies I have.

Use all or any combination of the follwing...
cucumbers(diced, seeds removed)
tomatoes(cherry or grape, halved or quartered)
green peppers(diced)
Granny Smith apples(diced)
red grapes(halved)
Add a equal mixture of ranch dressing and Hellman's mayo
(crumble in some blue or feta cheese if you like)
to that add to taste:
rice or raspberry vinegar
salt
fresh ground blk. pepper
granulated garlic(easy on this)
dill weed

Mix all sauce and dry ingredients together and add to veggie/fruit mix and refrigerate a couple hrs before serving.
