So my first set of ribs...1.5 oz of hickory, slab of st louis with the rib tips & flap smoking also. 200 deg (225 would have been better)for 5.5 hrs. tips & flap were great. pulled it all at the same time. when i got around to the ribs, they obviously could have gone longer (couple of more hours) still kind of tough and not loose on the bone. Here is my question. Can I throw them back on tonight for a few more hours to finish em up? My wife likes them cold, but I want some RIBS! Or should I admit defeat and try again next time. They were not "done when they are done"! Frowner I looked at some past forums, and any reheating was based on if the pit master (or flunkie in my case) had done it right in the first place!!

You could "try" but I'm not sure it would help. If you want, leave your wife some cold ones and you take a few and try.

It's similar to people trying to cook partially so they can finish later. The problem will be a lot of moisture has already cooked out and reheating them will affect the quality of them once you go above 165 or so and you need to go much higher to get them done more

Me? Just get some new ribs and make them fresh.
I doubt putting them in the smoker is going to add any smoke flavor to them, so forget adding wood if you do. If I were you I would put them in tin foil or cover them in a pan with tin foil. Add some moisture, like apple juice or BBQ sauce. Throw them in the oven or smoker at 250 and let them go for an hour. Start checking for the tenderness that you desire at the hour mark and put them pack in if necessary for 30 minutes or until they are how you want them.

As for my SL ribs I am at 250 for 4 hours and mine are almost always done at the 4 hour mark. You will get it right and probably on your next rib smoke will feel better about the results. Keep it simple until you get it down, and then start with all the "tricks".
