I have become a new owner to a model 55 cookshack and was wondering about rotating butts in the middle or end of a cook. Will I loose a lot of time by opening to check the different temps at the different levels? I also have noticed that what used to take me 10 hrs on my backwoods now only takes around 8. Is this typical or am I cooking the butts to hot. (225-250)degrees
