It's heating up! It's summer! It's time for another round of the Sauce and Rub Exchange!

This is the place to sign up for the July 2014 Sauce and Rub exchange. The exchange will work like this. You will submit your name here to this forum. I will add you to this list at the bottom of this post. You will then send me your name and mailing address to my private message box. I will reply to you that I have received it. Then when the sign up date closes, I will begin assigning each of the participants a recipient. I will then private message you your recipients name and address. You will have 12 days to put together a package containing not less than $25 in sauces and rubs. These sauces and rubs should be something you created or with some research a retail item that you think your recipient has not had the opportunity to try. It could be a local joints sauce or rub that only is sold in their establishment. It could be a sauce or rub that you pick up out on the circuit. Have fun with it, get creative and keep in mind that the $25 is a minimum. But nobody should expect more than the $25. I suspect a lot of people will be discussing their box here in the forum. Maybe you could add a personal touch item to really kick up the experience. A couple of your favorite beer coasters, a bbq sticker, etc etc. Not expected, but could be an added bonus item. Please remember this is supposed to remain anonymous and then once shipments are made you are free to discuss the boxes, sender, likes and dislikes. Just keep it light and honest. Some participants might actually send you a secret recipe they have been working on or one they use at home. They might actually like to hear some feedback. But, let me remind you. It is not a requirement in this exchange to send a homemade item.

July 1st-12th shipping
July 14th all shipments should be completed.

You are quite welcome. I hope you enjoy everything! The vac seal rub is THE SLABS PORK (aka Kyle Style Perk Up Your Pork). I buy it in bulk. I also use Perfect Bite Rubs (by COOK ONE) but I know you already got some of that! Wink

The Matouks is "Trinidadian Ketchup". It's not scorching hot (but go easy). It's great on and in just about anything.

They are awesome. Original, Sweet, & Hot. Microwave on a paper plate for about 3 minutes. Perfect and not greasy like the fried ones. Willie is from Sumpter, SC. Check out his YouTube on it.

Apologies to all - it took me a week to recover from the 4th Smiler

Someone who looks North once a year to decide whether or not to put the snow blower away and start planting spring flowers should be getting a package on Tues/Weds - it left Seattle on Saturday via USPS Priority. Hope you enjoy.

Also, I received my box this last Thursday...but haven't been home to open it yet. Tonight is the night - and I have that little kid on Christmas Eve feeling right about now! Stay tuned for an update.

Another 3rd place overall finish, that makes it 4 times in the last 5 comps that it's been a 3rd overall. I use to be happy with it, but it's starting to get tiresome...oh well!

Dave, This was what I received in the very first exchange. Doesn't look like a lot, but it's probably one of my favorite exchanges for one reason alone, one of THE BEST sauces I've ever tried. Spicy rub on some ribs, topped with that sweet sauce... NOM... NOM... NOM...



GaryT, Since I'm pretty sure she still won't give out the secret family recipe, ask Jan if she'll make me a gallon of that stuff? Everyone who's ever tried it loved it.

And yes, I did post this merely as an excuse to see if I can get some more of that awesome sauce! The check will be in the mail!

That is the coolest looking BBQ sauce bottle I've ever seen....
Thanks Shtrdave! Remember its not the quantity but the quality that matters. I love my box! Do you know how hard it is to get good maple syrup here--and you sent me 2 pounds! I use it on all my ribs, and I can see I will now need to be making pancakes more often. Taste tested the rubs--liked them both and anxious to try.

That Mr B's BBQ sauce is outstanding. I tasted it cold and can't wait to have it on the ribs. I usually like mine with no sauce but usually do a few with sauce for my kids. The sauce is so good I have to put it on all of them! Should be eating is an hour or so!!
Hmmm... Hey DakotaSmoke, have you tried the Swamp People Gator Bait seasoning on anything? Just wondering what to use it on? We don't have much gator up here. Well, there is a place I keep forgetting to call that's supposed to have it. But anyhow, the reason I ask is the main ingredient is Celery Salt, don't think that would taste too good on ribs. VERY pronounced celery salt taste.

ING: Celery Salt, Spices(including mustard, red pepper, black pepper, bay leaves, cloves, allspice, ginger, mace, cardamom, cinnamon) and paprika

And... Refrigerate after opening. Confused

Anyone have any ideas? Fish? Seafood?
If you want to get some Mr. B's sauce, send me a PM and I will give you his contact info. You won't get a recipe but you can buy it. Kansas State Fair Champion. His proceeds go to a church ministry. Best sauce ever. It is a KC style sauce, a little sweet, with a little tang on the back end. It gets better if it has sat on the shelf for a couple months before opening. He also makes a hot version.

I am a huge fan/supporter of The Kansas City BBQ Store! I like that I can buy bulk rubs. I have never tried their own rubs/sauces mainly because there are so many choices! Wings for lunch. Used a modified version of Adam Perry Lange's recipe. Took some wings and coated in Plowboy's Yardbird rub. Into an aluminum pan with about 2 TBSP of butter and a third of a cup of water, cover and onto the grill, indirect side for 45 minutes. Minced up 2 cloves of garlic and some green onion (white part) and added to about a cup of the liquid from the aluminum pan. Dunked the wings into the liquid and then onto a smoking hot grill, turn and baste with the liquid a few times until the skin get nice and crisp. Into a bowl and tossed with some of the D. L. Jardine's Chik'n Lik'n Sauce.

MMMM... MMMM... Something different than my usual hot wings, I'd make these again. Thanks DakotaSmoke!


I picked my box up on Wed. I believe, it came from Washington state so I am not sure who it is from but I believe it may be from Smokin'O as his is the only post that I noticed doesn't show where he is from. (I am assuming here that it is HE, I apologize if I am incorrect)

I received a wonderful box, with things I have and haven't heard of. None of which I have ever tried.

I tried some of the African Peri Peri on some shrimp tonight, it was fantastic, had a nice little bite to it.

Shtrdave - Yes, the box was from me....sorry for signing the card in such a sloppy fashion! Glad to hear that you aren't familiar with any of the contents. If you're ever in Seattle, you must check out one or two of Tom Douglas's restaurants. By no means are they barbecue joints - but he is a magician with rubs and sauces. As I wrote in my note - he is a local food celebrity who does a lot of great charity work too!

AndyJ - Please accept my apologies for not posting sooner...though I tried a couple of times and ran into upload issues as my picture was too large and it wiped out my post. I received your incredible box a few days before I left to take a group of Cub Scouts to summer camp - it was my son's first summer camp experience! Needless to say, it nearly killed me to leave town for nearly a week instead of staying home to play with all the goodies you sent me (none of which I know!). Honestly, I was like a kid on Christmas morning opening up my box. My wife may think I'm crazy....but she never complains as she's feasting on my latest smoke-scapade Wink

First impressions:
1) In his note, AndyJ practically apologized for having to repackage a few of the rubs that are only available in bulk. Simply stated - based upon the labels and professionally installed freshness seals (which I'm certain that you have to have a license to install) AndyJ included with his "repackaged" goods I am definitely out of my league!
2) Simply Marvelous Peppered Cow is incredible by itself. This is the stuff that fairies dream of one day using as magic pixie dust. I CANNOT WAIT TO USE IT THIS WEEKEND!

Well fellow BBqers, by all accounts this is the close of another great exchange. All recipients have received their packages. Once again, I am amazed by the generosity of this group of people. You guys found ways to send new products, old favorites, and interesting named items. The best part is, you will continue to use these products over the next several months and get to experiment with some great products from around the nation.

Goal for the next one- We need at least one international member to participate. Wouldn't that be fun? Postage might be pricey but I bet we could get a volunteer or two.

Used some of the John Henry Cherry rub the other night on some chicken thighs, was pretty good to much cherry flavor for me so I may cut it with some other rub. The Tom Douglas rubs are great we made some chicken with more of it and thinking next time about mixing it in something and injecting.

I've been slowly working on the box I received from Joe M in the last exchange.

So far I've used the Voodoo Sauce, the Trader Joe's Carolina Gold BBQ Sauce, the Chief Green Seasoning, and I'm still working on the Matouk's Sauce/Salsa.

The Chief Green Seasoning marinated some chicken thighs before being smoked and turned out really well.

You don't see much of the sauce like Carolina Gold up around here. I've used it on some pulled pork and pork ribs. I really like the flavor and will have to order some more of that.

Have to admit I was a bit nervous before opening the Voodoo Sauce but wow is that good stuff. Great flavor as a side on some pork loin ribs and everyone seems to like it.

The Matouk's is hot like you said but if you go easy on it the flavor is good. One friend of mine likes it so much he ordered his own bottle the other day, he can eat it in any quantity. No taste buds left for him.

Just wanted to thank you again Joe M for the variety of new things to try.
You're welcome. I'd love to hear how you like the rubs. If you want me to send some more mustard sauce just PM me. Charleston is the epicenter of mustard sauce as a lot of Germans settled here. Just about everything I use now I was introduced to through the sauce & rub exchange. My wife say to stop experimenting but where's the fun in that?! Wink
Made some hot wings for the playoffs today, using primarily items from this as well as past exchanges.
7 wings with Wing Dust
7 wings with combo of Everglade Heat and Chikky Rub Downeast Version.

Smoked with Peach at 225 for 1 hour.

Then onto hot grill to crisp the skin.

Coated 7 wings with combo of TigerSauce/Mr B's BBQ sauce.

The other 7 with combo of Bird Dog BBQ sauce/Lousiana Habanero sauce.

Results: Very good with both batches. Skin needed to crisp more. Both had a bit of heat and some sweet. Enjoyed both batches.

Almost all of these items came to me via the exchange, so to all those out there that don't participate---give it a try next time it comes around---it is fun and tasty too!
