I've used chunks of several different wood for over 7 years now with no problem. I keep them in their original boxes or bags in the base of my AQ in an unheated garage. All are good as far as I can tell (but I would never let them get wet!). However, I'm running out of peach for my loin backs!

The only problem you may encounter with very dry wood chunks in an electric smoker is they may burst into flames which typically goes out on it's own due to the lack of oxygen in the smoker.   I have given my wood a 10 or 15 minute soak a day before using when I thought it was too dry.  I use a moisture meter to determine.
