I saw a recipe not too long ago (in the forum)for smoked/stuffed portabello mushrooms. I bought some @ the store yesterday, but now I can't find the recipe. Mad They were stuffed & smoked in a CS smoker for about 3 hours. I have done a number of searches on portabello, stuffed mushrooms, and just mushrooms, but have not cane up with the post. Anyone out there remember the recipe, or the post??

Smoked Portabello Mushrooms with Smoked Crab Imperial

4 Portabello mushrooms, 5 - 6" diameter
1/2 lb. crab meat, drained and picked clean of shell pieces
2 green onions, chopped
2 Tbs. seasoned bread crumbs
1-1/2 Tbs. lemon juice
1 tsp. seasoned salt
1/8 tsp. Cookshack Spicy Chicken Rub
1-1/2 Tbs. mayonnaise
1-1/2 Tbs. Durkee sauce

Wash mushrooms thoroughly, remove stems, rinse and pat dry. Chop stems.
Smoke mushrooms in foil pan, into which holes have been poked, on one rack of smoker.
Place crab meat and chopped stems in similar pan on another rack.
On bottom rack, place pan of water.

Smoke at 200F for 1-1/2 hours, using alder (preferred) or hickory wood.

Remove and cool.

Mix together smoked crab meat, stems, green onions, bread crumbs, lemon juice, mayonnaise, Durkee sauce and seasonings. Adjust seasoning to taste.

Mound crab meat mixture (about 1/2 cup depending on size of mushroom) on top of drained mushrooms; spread and pat with paprika for color.

Bake at 400F for 15 minutes or until firm. Cool 5 - 10 minutes to set. Cut mushrooms into wedges to serve as an hors d'oeuvre. Serves 4-6

Or serve as appetizer on bed of braised radicchio; or as an entree with asparagus and lemon-dill sauce. Yield: 4 - 6
I smoked the Portabello's last nite in the 08. Just done two as a trial.I followed the recipe, except for the Durkee sauce, which I couldn't find ( I doubled the Mayo).
I used a few hickory chips, and had some alder sawdust which I put in tinfoil in the smoker.
They were great. It had a really good smoke taste & the crabmeat was awesome. I will definately do again. great taste & simple. I will look for some Durkee sauce the next time, or make my own. I Googled the recipe.
