The 1st time around is easy...season it according to the instructions. 2-4 oz of wood, 250o for 4 hrs. After that:

Foil the bottom of the smoker and the top of the wood box. Makes for EZ clean-up

Don't go overboard on wood. 2-4 oz of wood will give you plenty of smoke flavor. At some point the blue smoke turns clear...don't panic; you're still getting smoke.

Concentrate on determining proper doneness vs using strict cooking times.

Don't be tempted to open the door and peek every hour, you'll only prolong your cook time.

Buy a digital probe thermometer. There are many options discussed in the Thermometer section.

Keep notes as you go...they'll help you develop a better end result.
