That's easy Louie. Pick one out that looks good and try it. If you don't care for it, make a note of it, and try something else.

I personally like to try my own creations. Get in the spice cabinet, find something you like and give it a spin.

Just make sure to rub it down the night before and let it marinate in the fridge overnite.

Try various rubs. Cookshack rub is great, so is Atkins dry rub. I smoke b'backs all the time, pull the membrane, use a dry rub, put the ribs in the fridge for at least several hours, overnight is better, let them come to room temp and put them in my AmeriQue at 225* for 4 hours. They are always great. Good luck!
