My Amerique usually has a temperature fluctuation of 20-25 degrees. However last week I was cooking 2 butts and had to turn the unit off, then right back on. To my suprise the temperature went rightto the setting of 225, and did not vary more than 2 degrees (224-227) for the next 12 hours. This was verified on the Maverick ET-73 as well.

Later, I had to turn the unit off and on again. The usual variation of 20-25 degrees returned. The ability of the unit to maintain a stable temperature makes me think there must be a design flaw in the control unit. I know that the unit is capable of maintaining a stable temperature, but it usually does not do that.

Has anyone else seen a similar situation?

I have the same problems with mine. Had mine for about 1 1/2 years. I initially contacted Cookshack and after sending emails back and forth of the temps and times I tracked, they sent a bigger heating element. They make all of them with the bigger element now I believe. I noticed a difference, but it NEVER got to any 1 or 2 degree variation. It still has a variation of anywhere from 5 to 25 degrees. I had been through enough emails and trying things the first round that I just live with it now. It does a great job cooking and I've got used to doing certain things to offset the variance, enough to make it work for what I want.

I wouldn't know what to do if it stayed as close to what I set it to as what I've read others say. I'd probably set it and forget it.
