I can never wait long enough.. I put'em in the oven at 300* for about 45 minutes. Most of the heat is taken away by the cooking and even most of the ardent 'wusses' love 'em.

BTW, Stopped at the market today and picked up a pound of the yellow japs.. they are sweeter and have less kick. Pretty dang good too.

Rocky- We cook them at whatever temp we're at. Willy says 300 for 45 min; We go at 250 for 1 - 1 1/2 hrs. You'll get to recognize the shape as they shrivel and change colors. And it depends a lot on the origin of the chile, some are hotter than others.

We warned someone they weren't ready yet the other night, he didn't listen and he said it was the hottest thing he ever ate. A while later they were fine. The longer you wait, the milder.

I've smoked mine into chipotle too. Put them in with the butts and smoked them all night on a piece of foil. They looked real pretty.
