I just wanted to remark on how pleasant the folks at Cookshack are - I ordered an Amerique about 1 1/2 weeks ago. The ordering process went very well. Today, I called CS customer service to cancel my order and they were just as professional and polite as they were when I placed my order! This does lay testament to what many of you have already said...they really do have professional, polite, and helpful people working there.

Side note - my cancellation had nothing to do with CS - I have been having my doubts since I placed the order if this was the right smoker for me - unfortunately, I do not believe it is, so I am going another route.

Personally, I think your mistake was in cancelling your order. I know you have had your doubts and have been second guessing yourself, you've been expressing that all along.

You did not say what "other route" you were taking but I hope for your sake it is another model of CS because there is nothing equal to it.
Mike - You are right, I did have my doubts - not about the quality or the service of CS, but if this was the right smoker for me. I enjoy the taste and appearance of true log burning low and slow cooking. I do not mind tending fire (but do want something that I can be away from for a couple of hours...that is why I have my WSM). I wanted something with more capacity then the WSM, so that led me here to CS. The more I thought about it, the more I realized I did not want to give up what I refer to as a "traditional smoke taste and appearance". I am sure the que is very good off the CS smoker, but just do not feel like it is what I am looking for. That is what led me to Stump's cookers - I have known about them for awhile, and they are incredible cookers (20 hour burns, rock steady temps the whole cook, ability to use lump and wood chunks together, insulated chambers, etc). I have talked to a couple people that have both CS and Stumps - the general consensus is there is a difference in appearance and taste on the two cookers - not that one is better then the other, just that they do indeed produce a bit different product (everyone I talked to did say they loved both cookers though...not that they disliked the CS or the other) - that is the route I am going.
