Hey,Smokin'.

It is still great timing.We will see a month of questions coming up on all the forums,as you well know.

I don't go as bird crazy on Thanksgiving,because I know that there will be all kinds of give aways on fresh turkeys and fresh breasts,etc. afterwards.

I might freeze a little,but I usually smoke up a bunch of breast halves to foodsaver and freeze,give as gifts,use for salads and an assortment of other recipes.

I use different injections and methods for practice and to add variety.
The more 101's the merrier is my motto (actually its not). I'm actually deep frying a turkey this year (am I allowed to say that) so time is of no concern to me. When I was learning how to use my smokette I used your 101's like the it was holy scripture and I still use them for reference now. I would love to see more of them whenever you want to post them.

That's just the kind of thing I want to put in the Turkey 101, VARIETY. I can put the basics in, but I think one of the values of the 101's is to push the envelope when we can. Feel free to email me with any inputs, ideas, injections, etc.
