My husband, coming from Texas and now living in Charleston, SC, with is a pork state, was having serious withdrawals for brisket. After serious shopping we decided on the CS 008. Many thanks to Karen in customer service for answering my many questions.

So, seasoned on 8/3, I had already bought the brisket at Costco (had to ask for it as they trim all their cryovac and sell for $3.99 lb. In cryovac only $2.79 lb. good deal for Charleston. Seasoned brisket went into smoker 7AM 8/4. Opened once as we realized we really needed a thermometer( found Maverick ET72 at Bed, Bath & beyond for $39.99. use coupons for 20% off.)Temperature reached at about 7PM. Glad we invested in thermometer as 1 1/2 hr per lb. is only a guide line.We fed 5 adult & 2 children- was the best brisket we have ever eaten- wasn't even a crumb left for the dog.

8/5 put 2 5lb. chickens on and had plenty of leftovers,which I froze.

8/6 just put a boneless 12.23 lb. pork shoulder in for dinner and leftovers- are you seeing a pattern here? I may never cook inside again!! So, Thanks again to Cookshack for making my family happy eaters.
