If you think of the front leg of a hog,it is the shoulder section with the shoulder blade bone in it.

Also called a Boston butt.

If you think of from the first joint down,or a "knee",that would be a picnic.

The ankle down would be the hock.

These would all be fresh and not smoked/cured.

A fresh ham,or whole fresh pork leg,would also work.

The term pork butt can be scary or funny, but I read that its name comes from the way it used to be packed. Apparently some cuts of meat were named after the containers that they were stored and shipped in, and a butt is a short barrel. I read it on the internet, so it must be true. Wink Maybe Boston was a good place to pick up a few.
