It's hard to believe the summer has passed so quick, but hey I'm ready for fall and Labor Day. What's everyone got on the menu?

I cooked 4 packers and 2 PBs yesterday. I'm doing 6 slabs of Loin backs Sunday morning and since Sonja and I are invited to a party Sunday evening, I'm gonna treat everyone to some of Smokin's "boinks". Oh!, and if that's not enough BBQ, we are going to Windsor to judge Saturday...WOOHOO!

Wishing all the CS family a safe holiday, and whatcha cooking this weekend?

Still lobbying for choice meats. I'll be digging around in the freezer tomorrow for jerky meats. I haven't done that yet so this should be interesting.
If I have my way, I'll be trying the santa maria tri-tip. I drool every time I think about that thread. This should be a good weekend as my anniversary just passed. The wife should be a bit more...pliable.
Thursday I did two 14 pound packers, two 10 pound butts, 12 racks of SL Spares and a mess of chicken thighs for a comp/cookout. Friday (yesterday) I did 22 Racks of SLs for some folks who wanted them. Today I'm doing 20 pounds of Boneless Skinless Chicken breast to put up. Who knows about Monday, But I'm thinking some kind of prime ribish cut, or maybe just take the day off.

Try Costco or Trader Joe's. I'm in the Chicago area and the closest stores to me for both chains carry tri-tip as standard items. TJs come in single packs with 2 marinade versions - Santa Maria and Asada. Costco's are in 3 packs without marinade.

Leftover PB sandwiches for lunching on. Yardbird on the brine for dinner, and on my way out to do some brisket shopping for tomorrow's dinner.

I'd consider ribs for Monday, but my arteries will need a break and it is Taste of Colorado this weekend, so we'll go do some grazing there on Monday.

Cheers,
Ron
