Not trying to hijack the post, but along the same lines so I didn't want to start a new thread -- I started a butt this morning and just realized that while I covered the floor of the smoker, I forgot to cover the heat shield over the wood box. I know better than to "clean" the inside of the smoker, but what is the best way to get the excess off of the heat shield? Just scrape? Hot/cold?
I also have an amerique. Along with the bottom of the smoker and top of the heat shield, I also wrap my wood loosely in foil for easy ash clean up. Usually there is a small piece or two of foil left from fitting the foil to the other places. I use this scrap for the wood. More times than not I will scrape my grills with the ash foil wadded up before removing the foil down below, making for a quicker, easier clean up. Unless something is pressing, I foil back up ready for the next smoking.
