Which wood for salmon?

I and the folks I cook for, like apple or alder for fish.

Any light flavored fruit wood is good. I have even had good success with hickory but go way easy on it.

Now, you are joking on the pine, correct...?

NEVER, EVER use pine or any other conifer for smoking any food!

I like Alder.. but, I've also used oak and liked it as well. Alder was the preferred wood by the fish smokers in the fishing village I lived in for some years.

I agree with Wheelz.... I have never heard of using yellow pine for smoking. That is used for construction. Stick with hardwoods. Never and I emphasize never use pine of any type.
