Whole Hog

I have been smoking ofr a few years on horizontal smokers. I have three, the largest being a Horizon 24X48 and I plan on doing a whole hog. I have read up on it and there seem to be two main methods, one with skin on and the other with it off.

I would appreciate some feedback from anyone who has done whole hogs.

Welcome.

Most will cook them with skin on.

We'll try to help you,but I'd suggest you might try the bbq forum.

There are many whole hog cooks there,and one of the cook teams is also a Horizon dealer.
