New cookshack owner here, but not new to meat smoking. Broke down and got a smo25.
My question was about the wood not being burnt up completely. First smoke was ribs @ 225 for about 4 hours. One 2oz. lump of hickory. The bottom of the wood was charred but not consumed. Next cook was a pork loin, 2oz. Of hickory 2hr. I cut the wood into about 1 inch square by 2 inch long. Same thing. Last cook country style ribs, 2oz. of hickory and mesquite each. Wood was black but not consumed. I have since tweaked the heating element a little to touch the wood box. Is this common? Will see this weekend.
