So, the inaugural run I did pulled pork using the techniques I read on these forums, as well as Smokin' Okie's finishing sauce, and my own bbq sauce, and the results were absolutely fantastic! Everything worked to a "T". The only thing I would change is to spray down the racks with some non-stick before starting, but that's it. I'll be repeating this process for the 4th.
