I was servicing a unit. Two boards, fan and probe later, cookshack just sent the customer a new one. It was way off . First time seeing that. Sent all the boards back because I didn't have a scope to probe the board. new one worked fine. Temp swings are nominal and not worth tweaking to dial it in. It's not designed to run steady temp and thats ok. Only modification I add is an independent auger switch to kill auger so pot burns out before killing power and thus fans.
