I didn't think the fridge would get to an apx. 74% humidity! Hence the water. Also you mentioned well ventilated, so a fan came to mind.

My ham for the holiday was around 2.69 a lb. I guess that's not too bad, 56.00 bucks. I know that's a heck of a lot cheaper than buying prosciutto for $18 a lb in the supermarket.

Can you actually get it to the pungent flavor of a prosciutto?
