Reply to "Pork Butt 101"

Tried this out last weekend. Put 2 small butts (4.5 lbs each) in at 225* with an external thermometer. My Dad has the same Cookshack......after 9 hours it was reading 160* and 'Mr. Know-it-all' said they've gotta be done. Thermometer says no. He's hungry. So I popped them out of the smoker and put them in a 400* oven for another hour. Only got to 190*, but they were very good.

Next day I put them back in the oven for another hour and they were even better. Moral: it's done when it's done!
