For me, pork is fine at whatever your normal range is. For me, that's 250 for PB, but...

If you're doing more stuff, pick a good overall temp.

I see a lot of CS owners cooking at 225 and then saying it takes 18 hours. Go for 250 and it'll be done sooner. If you're going that long, you're using all your smoke up anyway, so "low and slow" at 180 or 200 isn't going to buy you any extra benefit.
