As far as using a dish to hold juice,I guess it is the apple juice?

For all that trouble,space involved,cleanup,etc,you might just rest it in foil with 1/2 cup of apple juice,when you are through.

That way you are getting even distribution of rub,smoke ,etc.

Just a thought.
