Put a 6lb. brined turkey breast on at 10:30 this morning. Cranked the 08 to 250. Smoker ran up to about 265 which is not too unusual, it sometimes swings from 235 to 265 depending on what I am smoking. I expected about a 4 hr. cook time. Temp went to 170 in just under 2 hours.Verified with an external probe. Very unusual. I wrapped in foil and a towel and into a cooler. Should I expect any problem with the turkey breast smoking so quickly?
