I am getting ready to have my mobile kitchen catering trailer designed. I want it to be self sufficient. What are the pros and cons of electric appliances versus gas appliances?? I am not worried about generators or gas. Just what is the best way all around.

I an going to have a complete kitchen. Full size refrigerator, full size freezer, microwave, ac, heater, over fired broiler, flat grill, 4 burner range, holding oven, meat slicer, 2 well fryer, FEC500, on demand hot water heater, steam tables, and a convection oven for starters.

Here's my preference:
These would be electric: Full size refrigerator, full size freezer, microwave, ac, heater, holding oven, meat slicer, FEC500, convection oven.

These will be gas: 4 burner range, broiler, flat grill, 2 well fryer, on demand hot water heater.
