Mustard Sauce
• 1 gal. yellow mustard
• 2 lbs light brown sugar
• 1 lb white sugar (2 cups)
• 1.5 qt honey (3#)
• 1.5 qt cider vinegar
• 1 qt apple juice
• 1 cup lemon juice
• 1 can (6oz) tomato paste
• 1/4 cup Worcestershire sauce
• 1/4 cup liquid smoke
• 1/4 cup chili powder
• 1/4 cup garlic powder
• 1/4 cup kosher salt
• 1 tbsp cayenne
• 1 tbsp white pepper

Combine, boil, simmer 30 minutes. Makes about 2.5 gallons. This can be modified by using molasses instead of brown sugar, or using peach preserves to replace some or all of the honey. Also, chipotle peppers or habaneros can be added for some extra kick.
