8lb Butt from Sam's
Basic rub from this forum.
Into CS last night at 9:00 with probe set to 200 and cooking temp at 225.
Checked on unit before bed, for some reason, probe temp was reading 200 and cooking was on HOLD. Unplugged the probe, set temp for 225, cook time 12 hours.
Re inserted probe next morning, meat was reading 140, four hours later,probe was reading only 148, checked meat with Thermogen, was reading 180, bumped temp to 245, gave it another hour, took off at 205, doubled wrapped, store in cooler, ate 4 hours later with sauce recipe for this forum.
Butt was excellent and will be calling CS tomorrow to review probe issue. Might be user error, or maybe probe issue.

Chicken quarters are next and I bought two more butts today and three racks of ribs.
So much meat, so little time.
