Here's what I found on the forum
Sounds like the hold is mainly useful for large cuts of meat? (not necessarily holding ribs for half a day)?

Just recently did a 9.89 lb butt on my Amerique.Started @ 7:00 pm w/ smoker temp set to 225 and probe temp set to 190. Reached 190 @ 2:00pm for a total of 19 hours. Smoker went into hold mode @ 2:00 pm. Here's my hold temps:3:00 pm smoker - 162 / probe - 1844:00 pm smoker - 139 / probe - 1665:00 pm smoker - 137 / probe - 1546:00 pm smoker - 137 / probe - 145Removed from AmeriQue @ 6:00 pm. (By the way GLH, this was the first time I opened the door)Let rest on counter for 1/2 hour then pulled. One terrific Que. Butt was tender and moist. One of the best butts I've done. The hold feature on the AmeriQue truly does work. No more foiling around.John

To me, the appeal of the AQ versus an 08 or a 50 was the temperature probe. I liked the idea of not having to hang around the house waiting for a butt or brisket to finish. The AQ will go into a hold mode (140 degrees) when your desired internal temp has been reached. This feature is really only useful on large (several pounds) cuts of meat. If this feature is appealing to you, then I highly recommend the AQ. If it doesn't excite you, then I would consider an 08 or 50. Based on your described use, any of them would be a good fit.Good luck with your decision.Matt
