So far I am leaning toward an AmeriQue but have a couple questions.

1)What is the max temp of this unit?

2)I live in Southwest Florida and have a saltwater canal in the back yard. I intend to keep the smoker outside, in the pool cage under the eave/rain gutter in back of the house. Would durability be a concern in this environment?

Well you certainly done your research. You've looked at CS's and Bradleys.

When you finally decide, how about a post why you decided what you did after your research?

Tom has had his multiple CS's in Florida on the coast for years (or it is decades now). If you store it outside, buy the cover. That will be sufficient to keep it working well.
Go ahead and get the AmeriQue. I did last April and love it. I have had all kinds and brands of smokers over the years and this is the best. Cookshack has excellent customer service, their construction quality is excellent, the ease of use and the finished product the unit produces is fantastic. You also have this excellent and very informative forum. Order the AmeriQue, you won't regret it.

and big Cookshacks and my FEC s set outside at the beach ,year round.

They are in a salt shower and soakin' wet all night.

I cook in high winds and pouring rain and never give it a thought.

I leave the covers on them.

Like Smokin' says,it has been about a decade and I have never had an elecronics,or other problem.

The times we may have wished to add something,CS service has gotten us overnight delivery ,and if it needed installation they will stay on the tollfree line for as long as you wish to work on it.

Since we cook comps,I have had the privelege of meeting Cookshack owners from all over the state and country and some cookers are 20 years old.

I have also run across a bunch of comp cooks that also own Cookshacks for home use.

I met one guy that had had a Bradley,but got rid of it after about 90 days.


I have heard that they are designed ,and do a decent job of coldsmoking cheese,etc.

That has been my only contact with them ,over the years.

I'd say you can show up at this month's bbq comps around Fl and talk to lots of folks wih Cookshack experience.

I'd say it will be tough to find one that has ever seen a Bradley,if that makes any difference.

Now I am a bit worried. I live directly on the water and just bought the black model 050 unit. It currently resides in my screened lanai when not in use. While not like being outside, the air can still get quite salty especially when a good wind is blowing. Maybe I should kick my charcoal units out of the garage and store the CS there.
Go ahead and buy the Amerique and get the cover. I bought mine last April and love it. CS covers are well built and not just thin vinyl things. I live in the great Northwest or is that 'great Northwet' !?? We get a lot of rain and lots of temp swings here - cold & dry to suddenly very warm & wet in a matter of hours, so exterior of everything gets wet from the condensation - even your house sweats on the outside. My Amerique works fine as long as you don't expose it to direct rain. All stainless so no rusting.
