I have just received my second FEC100. Reverse door. It is beautiful. Makes the one I already have look horrible on the inside. So I decide to really clean it up. I look in the forum and the interweb and don't see info about hosing it out. I see in the manual it mentions a degreaser. Now that I did that how do I rinse it all out? Of course I want to cover all the electronics. But I can't figure out what electronics need covered in the cook chamber. I do have plastic and foil over the firepot and chute. What else do I need to be careful of?

I would never ever apply degreaser to the inside of the FEC100. Aside from the shelves and shelf racks, all that is required is to scrape down the inside top, back and sides with a 4" spackling blade. The inner seasoning is your friend. Use the blade on the bottom as well routinely to remove ash, pellets and any grease accumulation. If you must, a light cleaning of the bottom can be done with Simple Green or a mild detergent solution.

The shelf racks, racks themselves, drain channel can be removed and cleaned with Grease Lightening or similar. Be sure to rinse them thoroughly. I also use G.L. on the lip below the door. Simple Green does the job on the ext. stainless steel.

Bottom line, keep harsh chemicals away from the inside walls.

I actually met a guy in a contest in Florida who washed it every time he used it in a contest. Why? He thought the smoke was wasted on the walls. Needless to say I didn't agree.

I'm with Max, use some sort of "food grade" cleaner, like him I like Simple Green.

You can remove a the racks, sides, tray and trough and clean them separately.

NEVER use any kind of pressure to wash inside. There are some openings (firepot) and areas (like around the temp probe, where the racks are hung, etc) that you have to make 100% sure to not get any water in there. The problem is that if the insulation gets wet, you're on a downhill slope.
I fully agree with AndyJ. I bought a used FEC 750 from a guy that took such care of it and kept it so clean it looked new. Its taken me about 8 burns. Finally, its got some good color. "Nice Chocolate Brown". My 100's are colored real good as well. I do clean them good once a year, and its getting that time. I use the "Grill & deep fryer" cleaner from SAMS. It has to be rinsed out so I use a squeeze bottle with hot water. I can control the pressure and amount of water in the cooker. With a bucket under it and a couple rolls of paper towels it turns out nice and clean. Then you have to burn some pellets to get your color back. You will trash your clothes doing it like this also.
