Several on this board have stated they thread the temp probe down through the smoke hole and into the meat. I never did. The door closes tightly, but it isnt an airtight seal, so Ive just been closing the door gently on the probe cable. No harm done, right? Wrong.

Yesterday, for company, I did a butt, brisket and one whole chicken, halved (all great, by the way). But I noticed that after the brisket was out and wrapped, and the chicken was out and wrapped, the butt hung at 188 for a long time, too long. The plateau we know about came and went and it climbed to 188 and hung there.

Nearing the planned dinnertime, I opened the door to do an instant temp read and my probe temp immediately read 201. Pinching the cable in the door apparently caused the erroneous reading. Never had before, but it did this time.

I'm a believer guys.its down through the smoke hole for me from now on. arkansasQer

Yep, that was a strange. You can still count the number of �smokes� I�ve done on my CS on your two hands, so I don�t have experience you and others on the board have, but I never expected that to happen. First time my �Pyrex� has given a false reading. And, interestingly enough, I brought the cable out through the upper corner where a small amount of smoke escapes anyway, so the door wasn�t �clamped� down on it either. I�m lucky I decided to check with an insta-temp when I did.
