The intense course I took met every night for one year in my back yard and consisted of one student and no teachers, a firebox smoker, and a crapload of spareribs. Nothing learns you the trade like doing it, a lot, and reaching your own conclusions organically. Not trying to be a smartass here.
Steven Raichlen has a course, but he'd probably agree with me, I hope. Get yourself some meat, a smoker, some wood, Practice and feed it to your friends. I don't think there is a perfect way to come into the business. Check out zoning and health department specifications. Heck. We're just starting out. We got health department ok, but are still waiting to get the trailer. It'll be a beauty when it's done. We're at the frustrating level. We want to start out with competition entries. Hopefully, we'll get into catering, or we may just find that competition is all the fun we need. We just love to BBQ.

I gotta agree....it takes a lot of practice to become consistently good. I served my family and friends a lot of late meals, bitter, creosote-encrusted ribs, tough 'n' chewy brisket, you name it. It is a different game than many other kinds of cooking. You gotta have a feel for it, not just follow a recipe or formula.

That said, Barbecue is a lot of fun. Not all that many people really know how to do it; when it's good, it's really good.

Peggy and Jack, when will you get the trailer? I am anxious about mine, and you all are in line in front of me! Keep us posted!

a new place opened up in my neck of the woods and i wont mention the name but my girl stopped there the other day and ordered some spares and brisket and that's just what she got...ribs and brisket with some smoke on it...no seasoning no spice no nothing...i inspected it and i am not kinding...no pepper no salt nothing. i don't understand how a biz can survie that way...so far they've been open for a year....go figure Confused

The latest date we have is August 20. Alex says it's the final date. My poor smokers are down in Miami. I'm in St. Augustine. It's hurricane season. My nails are bitten down. I've scheduled time off from work and cancelled so many times, they doubt my credibility now. How far are you behind us? The only way I keep sanity is by thinking "If I was having a house built, it would be delayed, too." But they are good about keeping us posted. I don't doubt that they are doing us right. Let us know how your trailer is coming along.

well i have to say that practice was how i did it. that and a lot of reading. have about 200 culinary books in my workshop (thank god i'm a chef and they are tax write offs). smoked for 20 years on nothing but bullets. they are fine learning tools as the weather affects them a lot. i kept a log book of sorts and always when i experimented i only changed one thing. have fun doing it, stay intense, and dont be afraid to experiment. heck my wasabi rubbed chicken came out good last week. drank the beer added sake to the empty can and went for it
as far as schools go who knows. smoking was never even remotely touched on at the culinary school i attended

I heard you are a good professor. Billy Bones says so. I wish so much that we could be in Houston.
I do get to go to a "Judge School" in Florida. We will be attending the FBA Fun Cook Off whether or not we have the trailer. Jack will go to the "So You Want to be a Cook Team" school.

Maybe that is an idea for Kevin. Do you have bbq association meetings in Columbia?

I hope to get an idea as to what the judges look for.
