I cooked an 8.7 lb. brisket overnight last night for 12 hours. The interior meat came out PERFECT but the bark had a slight bitter taste to it. Any idea as to why this might have occurred? I used approximately 4 oz. of hickory wood and have not had this happen before on any of my ribs or pork butt.

you might have had what we in north florida call a piece of punk wood. i have had that happen on pork before and when i looked at my wood chunks they were damp not wet but damper than the ones on top of my supply. the only thing i can think of is it was just wet enough to let some kind of baddy grow just enough to flavor it
