Hey guys,
I am in the beginning phases of a bbq catering business. I have a Klose 36" by 10' offset smoker and a trailer tech concession trailer.
I have a restaurant in town that serves traditional comfort foods. They want me to provide bbq once a week on Saturdays. They just want me to provide the meat only. They are going to buy the meat from the locker that I request. So my only cost is wood/charcoal and time. They are hoping to serve around 100 for a Saturday night. My question is that I have no idea what to charge the restaurant. I appreciate any suggestions.
