I'm in eary stages of thinking about part-time BBQ business... and trying to figure out if a BBQ truck would meet codes for catering. Meaning: rather than trying to own or rent a commercial kitchen (very costly), could a much less costly truck be used as the commercial kitchen that allows me to get the catering license. Then I could cook out of the truck to do catering gigs, or just do the truck-on-the-side-of-the-road thing. Are regs on when you can keep a food truck, cook with the food truck, and park and sell all done on a local basis? Do I need to check with the town about that? Thanks.

Most of the queries directed to this end of the forum have involved catering...an area I admit to not being on top of...simply because I don't cater. Just letting you know that I DO read what gets posted here, and if it's a catering related issue, I'll defer to CaterGreat, who is the GOTO guy.

Woodburner, in your case I would advise you to contact your state health department. They will provide you with the necessary code information needed to pass inspection. At the same time, contact the local health and/or zoning departments where you intend to operate. Here is Vermont, some towns have restrictions as per mobile food vendors; mine being one of them.
