I would like to share the fact I`m going to set three big beef bones on the cooker for a late afternoon snack.
Marinated the ribs in a store bought steak sauce marinade chock full of cracked pepper.
Also gave them a very light dusting of CS Brisket rub for fun.
Set the cooker to 250º and there is still sits after an hour and a half so far.
I must say, the aroma is off the chain, its incredible.
I`ll post a finished pic when its done.

Simply marvelous, absolutly wonderful.
I cooked them at 250 for just under four hours, I think next time 3.5 hours would be the ticket.
Man, they were really good, I havn`t done beef ribs in years,
I certainly will be doing them again.....next weekend actually.
I`ll make up a nice sloppy mop for them.
Sorry about the smokey picture....this was about a half hour or forty five minutes before I took them off.
