Hello Everyone,
I am new to this forum. I just opened a bbq restaurant. I already have a casual fine dining restaurant that has been open for 8 years. I am the chef and owner of the restaurants. I have a great chef that also helps me at both places. I would like to add a beef rib to the bbq restaurant. I have tried sysco and southern foods. they have sent me beef short ribs (not cut). but these have very little meat. more like braising ribs for stocks. Can any bbq restaurants help me with the name (spec) of the product you are using. Also can anyone share with me what their food cost has been. Any help would be great. I love my cookshack smoker. Thanks for any help you can give.
