Cal, I never have. I'm not sure I have ever even seen chuck ribs. Just always cooked the plate ribs.

Chuck ribs are all that I can find around here. Some of the racks are not very uniform between ribs, some are quite a bit thicker than others, some have large pockets of fat. But they sure do taste pretty good. Actually going to smoke up a rack tomorrow. I'll take some pics if I remember.
