I am mounting an FEC500 into my mobile kitchen. I will be using a Kubota diesel for power. Gen specs say 2% regulation. Will this power be smooth enough or will I need something extra? Kitchen is split into two seperate systems so that when shore power is avail I can use it for part of the load. Most places have 30 amps or less. 1/2 on shore power 1/2 on gen. NOT PARALLEL OPERATION seperate systems.

Can't speak for the FEC 500 but I did call Cookshack (FEC 100) and Traeger both when we were generator shopping for our mobile unit. They both said the same thing that you don't need anything really special if you are running your unit off of generator power.

We don't use it to often but we ended up getting a 8500 watt (10,000 surge) at Northern Tool and haven't had any issues with any of our equipment.

The only thing that I can see that absolutely need an inverter class generator would be your computer equipment, but I'm no expert on this topic.
