Just want to thank everyone at Cookshack and Head Country, Fast Eddy and all that attended the BBQ class today. My Husband called both last night and today and he was more excited than a kid on Christmas Day! He had a great time and really enjoyed meeting everyone, he says you are all the best! (I'd have to agree) Also want to thank all for the hospitality you all showed my Mother-in law last night, she said she had a great time and the best BBQ she had ever tasted. Thanks for helping me give him the best anniversay present yet.

Yes I have to say thanks also to everyone at CookShach and Head Country. Eddy and Paul did a great job teaching. I just hope that we make you guys proud down the road. I have to say it was great to put a face with a name. CookShack bent over backward for everyone there you guys are top notch people. I hope you guys can come done and see us in the SunShine state soon so we can return the favors.

The School was a great sucess and great time meeting everyone on the forumn . Cookshack , Fast Eddy, and Paul from Head Country did a super job of making everyone feel at home . I don`t believe no one went hungry or thirsty . Mark the next one on the calender and you will be very pleased to attend .

I want to thank Eddie & Paul for sharing with us their tips, tricks, and methods of creating Championship quality Q. I know I dont compete, but still found the class absolutely riviting. A special thanks to Stuart for hosting this second class. Donna & Erin kept EVERYTHING moving smoothly. And finally... meeting people I have chatted with for a year this month, it was an experience I wont soon forget, but may want to repeat.

Last nite, for Mothers Day, I fixed my wife her beef ribs, but this time we used the Head Country rub. It looks like that rub will be a keeper at our house. I KNEW I should have bought a case while I was there. Smiler

I can echo the comments above.

What else stood out to me was that this was an excellent comp cooking course,by two great cooks,with a bunch of FEC s to work on.

It would have been superb,if you never intended to have a pellet muncher.

We all got to question the instructors about their markedly different comp techniques,but also to interact with the developers of the FECs and the rest of the group that cook on FECs.

Haven't had time to sort it out ,yet,but there were great folks to attach to their names and certainly a great value for the money spent.

One more treat was a chance to interact with Smokin' Okie,whom we all depend on to get our daily fix from the world of Cookshack.

Donna, Erin, Karen, Elizabeth - the new loves of my life. What an incredible time I had in beautiful Ponca City! If I could sum it up in one word, I would say, "totally awesome".......ok, 2 words. If I didn't show it, which I think I did, I had a wonderful time! Thank you! To Stuart, you are a true gentleman for opening up your organization to fans such as us. To Smokin', you're as cool in person as you are on the net. To Eddie and Paul, masters of the BBQ universe, your instruction was priceless. Thank you everyone!
I apolagize for this taking so long, But I wanted to drop everybody a note to say thanks to Paul, Eddie, & everybody at Cookshack and Head Country.
The school was well worth the money, and a wealth of knowledge was there. Erin, you and your people deserve a medal for the way you organized the course, and kept everything flowing smoothly.
It was a real treat to meet the folks I have been reading about here & other places.
In short, the hospitality shown us was above the board.
If anyone reading this is in doubt about whether this course is worthwhile,all I can say is don't miss the next one!
I had a ball at this class. What a great group of people! I am so glad to hear that you all (if I were talking it would be "y'all") had such a good time and learned what you wanted to learn. I was simply blown away that we had people from as far away as New York, California, Florida, South Carolina ... as well as more "local" folks like Kansas, Arkansas, Oklahoma, Missouri, etc.

Paul and Eddy are excellent teachers as well as talented professional competition cooks.

And we ate GOOD, didn't we? Smiler
