Okay, Tom has talked many times here about "tumbling" and "injecting" solutions in many of the items for sale.

Now the latest.

Tyson is selling a new line of injected chicken breast called:

Even Cook

It's injected with 15% chicken broth and other items???

So, can we all say it together..."commercial brining"

Wanted to try some "double smoked" chicken for Grilled Pizza's tonight...I'll report back.

Does this mean that you put a cold smoke on it first, then cook it as normal?

I use this to pretty good effect. Maybe a better name for it is "pre-smoking". But maybe you're doing something different. Do tell.
See Tyson Web Page for details on their "TastyBasted" line. A year or two ago, they changed to a "solution-added" product, then changed back to "all natural minimally processed". TastyBasted seems to differ from the previous iteration in that it includes flavorings. And apparently they'll offer both products, thank the lord. They're pushing TastyBasted pretty hard, coupons and 1/2 price at Meijer this week.

One other note, and maybe it should be posted separately: Tyson's holding a chicken cooking contest. One winner per state, plus overall winners. Enter by October 15. Special bonus for recipes using dark meat.

Could be a great opportunity for a 'shacker to win some glory for him/herself and his/her favorite smoker brand! And how many entries could there be from a state like Alaska, say? They do have chicken up there, don't they?
Tyson is fighting words up here. They are the ones who had Clinton in their pocket and instituted IFQ's here. Individual Fishing Quotas. They bought a factory on Kodiak, and bought my husband in the deal. We protested mightily, even getting press in National Geo. When Tyson said they want to be: "The Premier Producer of Protein in the World", that's when I got scared. If one company provides the world's protein, that's too much power. Reminds me of Soylent Green!

Husband quit Tyson, thanks be. When we left Kodiak we sailed past a burning cannery and Tyson got out of the fish business. Unfortunately, IFQ's still stand. The rich get richer.

You will find no Tyson product in my home. They also have very questionable hiring practices and are up against the government as we speak on that. Faking visas for immigrant workers! Wonder how many terrorists they helped out?

Tyson was definitely in bed with Clinton, certainly figuratively and probably literally. Remember the "chilled poultry" deal? It's still fresh chicken if it's only frozen to 20 degrees or something like that. Just don't drop a fresh chicken on your foot.

On the other hand, Tyson's about all there is in the grocery here.

And I'd say commercial brining's been around since the advent of the self-basting turkey if not before.
tjr, I agree, "brining" has been here since the butterball turkey. However, that's more marinade than brining. What I was trying to illustrate is that brining is out there, they're just "changing" the name to keep us off the track.

Personally, the chicken breast were "mushy" and that's because of the brining solution in too long. And Tyson says they cook 40% faster (a fact we've talked many times that brined birds smoke faster).

I won't be using these again.
